It is a staple ingredient of Mediterranean cuisine - extremely healthy and loved all over the world. It is usually found under the name olive oil, but should correctly be referred to as olive oil, olive oil or simply oil. Without it, there would be no real Greek country salad (choriatiki), the famous vinaigrette sauce or Mediterranean appetisers (mezedes). It is a must-have product not only in the kitchen of Greekophiles, but of all lovers of tasty and healthy food. 

The highest quality olive oil is an unfiltered product, obtained by cold pressing, from Greek or Spanish olives. The term extra virgin indicates the best category of oil, which not only tastes great, but also contains an abundance of polyphenols and other beneficial nutrients. 

Olive oil is pressed in Greece, from selected varieties of olive tree fruit. Storing it in dark glass bottles preserves its freshness and prevents oxidation of valuable antioxidant compounds that are sensitive to UV rays. 

Extra virgin oil is first and foremost a rich source of unsaturated fatty acids, especially oleic acid (omega-9), vitamin E and polyphenols (note, these are only found in extra virgin oil!). What does this mean? First and foremost, support for normal cholesterol levels, prevention of atherosclerosis and cardiovascular diseases, as well as a lower risk of cancer, thanks to the nullification of free radicals.

Directions for use:

Olive oil is perfect for baking, salads, appetisers and other dishes served cold.


Storage: Once opened, olive oil is fit for consumption for 8-10 months. It is best kept in a dry, sunless place, but also not in the fridge, due to its sensitivity to rapid temperature changes. Under refrigeration, the oil will turn cloudy, but this is a natural and reversible process. Its flavour should be clear, slightly spicy and slightly bitter - precisely due to the presence of valuable polyphenols - a sign that the oil is fresh. To suit your taste and as an experiment, add herbs and spices such as garlic, rosemary, basil, chillies or sun-dried tomatoes to the bottle. The oil preserves naturally, and flavoured oils prepared in this way go well with Greek, Spanish and Italian dishes.
