Almond flour is made by finely grinding the seeds of the almond fruit, known more widely as almonds. This is one of the healthiest nuts, classified as superfoods. First of all, they contain a lot of healthy fats, a lot of vitamin E and minerals - calcium, magnesium, zinc, potassium and phosphorus. In addition, they support the work of the brain, stimulating creativity and strengthening concentration. Ground almonds are actually just as healthy as whole almonds. That is why almond flour is a good choice to add variety to traditional flour dishes. Among its many advantages, it is worth mentioning its excellent taste and the fact that it is gluten-free. It is worth remembering that nuts are one of the most common allergens, so people who are allergic should use them carefully, especially if they are not sure which types of nuts sensitize them.
In the case of nut and pod flours, it is usually very difficult to completely replace 1: 1 wheat flour. Ground almonds are an exception to this, however. It should be remembered that with a complete replacement of wheat flour with almond, the baked goods may have a different structure and may not rise properly. A special case is also yeast dough, for the preparation of which you need leaven. When kneading them, it is best to mix ground almonds with another flour that has better baking properties - e.g. wheat or spelled flour. This will allow the dough to rise better.
