This mix is the perfect combination of 4 flours: rice flour, chickpea flour, flax flour and gluten-free oat flour. The mix of ingredients allows you to prepare a unique pizza dough that not only tastes delicious, but is also full of fibre and nutritional value. What's more, the product is fully vegan, without lactose, thickeners or preservatives - an ideal choice for health-conscious people and those who want or need to avoid wheat-based products.
Rice flour - Light and delicate, it makes an ideal base, giving a subtle texture to pizza dough. It is a source of easily digestible carbohydrates, keeping the pizza light but filling.
Tapioca starch - It gives the pizza dough a light and elastic structure, making it soft and pleasantly springy. Tapioca starch is also a natural thickener that promotes the perfect texture without the need to add artificial ingredients.
Chickpea flour - Full of plant protein, it adds elasticity to the dough and helps to achieve the perfect texture. Chickpeas are also rich in B vitamins and iron, making them the perfect ingredient for a healthy cake.

How do you prepare the perfect pizza dough with our flour mix?
The whole preparation process can take you as little as 60 minutes, which already includes the time for rising and baking the dough!
Here is the recipe for a wheat-free pizza base:
- We start with the leavening! Pour 100 ml of warm water into a large bowl, add the yeast and 1 teaspoon of sweet syrup (such as maple or agave syrup), and stir vigorously to combine the ingredients.
- After about 2 minutes, add our pizza flour mixture to the leavening mixture.
- Grab a mixer with the hooks or trust your hands - mix the dough on low speed until the ingredients are evenly combined.
- Add the olive oil and knead until the dough forms a smooth and elastic ball.
- Time to pause for a moment! Cover the bowl with a clean cloth and let the dough rise in a warm, quiet place for about 30-60 minutes. The pizza dough should have increased in volume by about 50%!
- Preheat the oven to 220°C with the fan on.
- Transfer the risen dough to a baking tray greased with olive oil and spread it evenly with your hand or roll it out. A round baking tray with a diameter of 26-28 cm will be ideal.
- Prick the top of the bottom with a fork so that the pizza base bakes evenly.
- Place the dough in the oven and bake for about 10 minutes, until the edges are beautifully browned. You can extend the baking time if necessary. Don't stress if the cake cracks slightly - this only adds to its character!
- Take the baked cake out, brush it with sauce, add your favourite ingredients and pop it back in the oven for another 5 minutes.
The result? A delicious pizza dough that will take you straight to sunny Italy! You can prepare it either as an ultra-thin and crispy version or as a fluffier version.
