Ideal for baking, it introduces nutritional value to the diet, although it is not suitable for people with gluten intolerance!

Dark spelt flour is a product obtained by grinding the seeds of spelt, which is a variety of wheat. It is characterised by a darker colour than traditional spelt flour because it contains more of the outer layers of the grain, which are rich in fibre, minerals and nutrients. Dark spelt flour is popular for its nutritional properties and taste.

It is important to note that dark spelt flour is not completely gluten-free and is therefore not suitable for people with coeliac disease or who have a gluten intolerance.

Dark spelt flour contains a number of vitamins and trace elements:

  1. Fibre: it is rich in dietary fibre, which aids digestion, regulates blood sugar levels and helps maintain a healthy intestinal flora.
  2. B vitamins: provides B vitamins such as thiamin (B1), riboflavin (B2), niacin (B3), pantothenic acid (B5) and folic acid (B9). These vitamins play an important role in energy metabolism, nervous system function and red blood cell production.
  3. Vitamin E: also contains vitamin E, which is a powerful antioxidant and contributes to the protection of cells from oxidative damage.
  4. Iron: is a micronutrient found in dark spelt flour that is essential for the proper production of red blood cells and oxygen transport in the blood.
  5. Magnesium: is a good source of magnesium, which plays a role in many metabolic processes such as protein synthesis, muscle function and the nervous system.
  6. Phosphorus: also provides phosphorus, which is essential for healthy bones, teeth and proper cell function.

Dark spelt flour has many uses in the kitchen:

  • Bread baking: it is ideal for bread baking. It can be used on its own or in combination with other flours, such as wheat flour or light spelt flour. It adds a unique flavour and texture to bread.
  • Cakes and cookies: it can be used for baking cakes, cookies, muffins and other sweets. It gives them a slightly thicker texture and adds a delicate nutty flavour.
  • Pies and pancakes: You can use dark spelt flour to make potato pancakes, vegetable pancakes, pancakes or omelettes. It will add an interesting flavour and a more pronounced appearance.
  • Pasta: it can be used to prepare pasta such as tagliatelle, fusilli, penne, etc. Pasta made from dark spelt flour has a characteristic colour and nutty flavour.
  • Coating: it can be used as a coating ingredient for cutlets, chicken or fish. It will add a crunchy texture and a slightly nutty aftertaste.
